Ingredients

  • 500g all-purpose flour
  • 1 tablespoon instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 300ml warm water
  • 3 tablespoons olive oil
  • 2 tablespoons zaatar spice mix
  • 200g feta cheese, crumbled
  • 200g fresh spinach, chopped
  • 1 teaspoon minced garlic
  • Salt and pepper to taste
  • Extra olive oil for brushing

Preparation

  • 1.

In a mixing bowl, combine the flour, instant yeast, sugar, and salt.

  • 2.

Gradually add warm water and olive oil to the dry ingredients, mixing until a dough forms.

  • 3.

Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

  • 4.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

  • 5.

Meanwhile, heat a tablespoon of olive oil in a pan and sauté the minced garlic until fragrant.

  • 6.

Add the chopped spinach and cook until wilted. Season with salt and pepper. Set aside to cool.

  • 7.

Once the dough has risen, punch it down and divide it into 8 equal pieces.

  • 8.

Roll each piece into a flat circle about 4-5 inches in diameter.

  • 9.

Spread a tablespoon of zaatar spice mix onto each circle, leaving a small border around the edge.

  • 10.

On one half of the circle, place a mix of sautéed spinach and crumbled feta cheese. Fold the other half over to create a pocket and press to seal.

  • 11.

Heat a non-stick skillet over medium heat and lightly brush with olive oil.

  • 12.

Cook each manakish for about 3-4 minutes on each side until golden and cooked through. Repeat with the remaining dough.

  • 13.

Serve warm, drizzled with additional olive oil, and enjoy!
