Ingredients

  • 2 cups chopped mixed vegetables (carrots, bell peppers, zucchini)
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2-3 green chilies, chopped (adjust for heat)
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 can (15 oz) diced tomatoes
  • 1 cup vegetable broth
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon brown sugar (optional)
  • Fresh cilantro for garnish (optional)

Preparation

  • 1.

Heat the vegetable oil in a large pot over medium heat.

  • 2.

Add the chopped onions, garlic, and ginger. Sauté for about 5 minutes until the onions are translucent.

  • 3.

Stir in the chopped green chilies, curry powder, paprika, cumin, and coriander. Cook for another 2 minutes, allowing the spices to release their fragrance.

  • 4.

Add the mixed vegetables. Stir well to coat them in the spice mixture and cook for 5 minutes, stirring occasionally.

  • 5.

Incorporate the diced tomatoes and vegetable broth. Mix everything together and bring to a simmer.

  • 6.

Season with salt, black pepper, and brown sugar (if using). Stir well and allow to simmer for about 20-25 minutes, or until the vegetables are tender and the flavors meld.

  • 7.

Taste and adjust the seasoning as needed. If you desire more heat, you can add more chopped green chilies at this stage.

  • 8.

Once the Chakaka is cooked, remove from heat and let it rest for a few minutes. Garnish with fresh cilantro before serving.
