Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup boiling water
  • 1/4 cup cold water
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 1/2 cup scallions (green onions), finely chopped
  • Soy sauce (for dipping)
  • Sesame oil (for dipping)

Preparation

  • 1.

In a mixing bowl, combine the all-purpose flour and salt.

  • 2.

Pour the boiling water into the flour, stirring with a fork until a shaggy dough forms.

  • 3.

Add the cold water gradually while mixing until the dough comes together. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth. Cover with a damp cloth or plastic wrap and let it rest for 30 minutes.

  • 4.

After resting, divide the dough into 4 equal portions. Roll each portion into a thin circle (about 8 inches in diameter) on a floured surface.

  • 5.

Brush a thin layer of vegetable oil over the surface of each dough circle. Sprinkle a quarter of the chopped scallions evenly on top.

  • 6.

Starting from one edge, roll the dough tightly into a log, then coil the log into a spiral shape. Flatten gently with your palm, then roll out again into a 1/4 inch thick circle.

  • 7.

Heat a nons-stick skillet over medium heat and add 1 tablespoon of vegetable oil. Once hot, place one pancake in the skillet.

  • 8.

Cook for about 3-4 minutes per side until golden brown and crispy, adding more oil if necessary. Repeat with the remaining dough portions.

  • 9.

Slice the pancakes into wedges and serve hot with soy sauce and sesame oil for dipping.
