Ingredients

  • 1 lb breakfast sausage, casings removed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup fresh spinach, chopped
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg
  • 6 cups cubed day-old bread (about 1 loaf)
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil, for greasing the baking dish

Preparation

  • 1.

Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish with olive oil.

  • 2.

In a large skillet over medium heat, cook the sausage, breaking it apart with a spatula until browned and cooked through, about 5-7 minutes. Drain excess fat.

  • 3.

Add the diced onion and minced garlic to the same skillet, cooking until the onion is translucent, about 3-4 minutes. Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat.

  • 4.

In a large mixing bowl, whisk together eggs, milk, Dijon mustard, salt, pepper, and nutmeg until well combined.

  • 5.

In the greased baking dish, layer half of the cubed bread, followed by the cooked sausage mixture, and then sprinkle with cheddar and mozzarella cheeses. Add the remaining bread cubes on top.

  • 6.

Pour the egg mixture evenly over the top, pressing down gently to immerse the bread. Sprinkle the grated Parmesan on top.

  • 7.

Cover the baking dish with foil and let it sit for at least 30 minutes to allow the bread to soak up the egg mixture, or refrigerate it overnight for the best results.

  • 8.

Remove the foil and bake in the preheated oven for 40-45 minutes, or until the top is golden and a knife inserted in the center comes out clean.

  • 9.

Let it cool for 10-15 minutes before slicing and serving.
