  • 1 cup masarepa (pre-cooked corn flour)
  • 1/4 cup milk (or water)
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 tablespoons butter (melted, optional)
  • Cheese (shredded, for filling, optional)
Instructions
  1. 1If using frozen corn, thaw and drain the corn kernels. If using fresh corn, blend just half of the kernels in a food processor until coarsely pureed, keeping the other half whole.
  2. 2In a large bowl, combine the blended corn, whole corn kernels, masarepa, milk or water, salt, baking powder, and melted butter if using. Mix until a dough forms.
  3. 3Divide the dough into small balls (about the size of a golf ball).
  4. 4Flatten each ball into a disc about 1/2 inch thick.
  5. 5Heat a non-stick skillet or griddle over medium heat. Place the arepas on the skillet and cook for about 5-7 minutes on each side, until golden brown and cooked through.
