Ingredients
  • 2 cups of precooked cornmeal (arepa flour)
  • 1 1/2 cups of warm water
  • 1 teaspoon of salt
  • 4 large eggs
  • 1 cup of crumbled feta cheese (optional)
  • Vegetable oil for frying
  • Fresh cilantro for garnish (optional)
Instructions
  1. 1In a large bowl, mix the warm water and salt into the precooked cornmeal.
  2. 2Knead the dough until smooth and let it rest for about 10 minutes.
  3. 3Divide the dough into 4 equal portions and shape them into discs about 1/2 inch thick.
  4. 4Heat a generous amount of vegetable oil in a skillet over medium heat.
  5. 5Once the oil is hot, fry the arepas for about 4-5 minutes on each side until they are golden brown.
  6. 6Using a knife, carefully create a pocket in each arepa, making sure not to cut all the way through.
  7. 7Crack an egg into each pocket, adding feta cheese if desired.
  8. 8Return the arepas to the skillet and cover. Cook for about 3-4 minutes or until the eggs are cooked to your liking.
  9. 9Garnish with fresh cilantro before serving.
