- 1 1/2 cups of warm water
- 1 teaspoon of salt
- 4 large eggs
- 1 cup of crumbled feta cheese (optional)
- Vegetable oil for frying
- Fresh cilantro for garnish (optional)
Instructions
- 1In a large bowl, mix the warm water and salt into the precooked cornmeal.
- 2Knead the dough until smooth and let it rest for about 10 minutes.
- 3Divide the dough into 4 equal portions and shape them into discs about 1/2 inch thick.
- 4Heat a generous amount of vegetable oil in a skillet over medium heat.
- 5Once the oil is hot, fry the arepas for about 4-5 minutes on each side until they are golden brown.
- 6Using a knife, carefully create a pocket in each arepa, making sure not to cut all the way through.
- 7Crack an egg into each pocket, adding feta cheese if desired.
- 8Return the arepas to the skillet and cover. Cook for about 3-4 minutes or until the eggs are cooked to your liking.
- 9Garnish with fresh cilantro before serving.
