- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1 cup bean sprouts
- 1 bunch fresh mint leaves
- 1 bunch fresh cilantro leaves
- 10 rice paper wrappers
- 1/2 cup crushed peanuts
- 4 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon chili paste
- 1 tablespoon honey
- 1 teaspoon sesame oil
Instructions
- 1Prepare all the vegetables and herbs by washing and cutting them into thin strips.
- 2In a bowl, mix together the soy sauce, lime juice, chili paste, honey, and sesame oil to create the dipping sauce.
- 3Fill a shallow dish with warm water. Soak each rice paper wrapper in the water for about 10-15 seconds until softened.
- 4Lay the soaked rice paper on a clean surface. Place a few sticks of mango, cucumber, carrot, bell pepper, bean sprouts, and a few mint and cilantro leaves in the center of the wrapper.
- 5Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top, similar to a burrito. Repeat with remaining wrappers and filling.
- 6Serve rolls with the dipping sauce on the side. Garnish with crushed peanuts on top.
