Ingredients
- 2 lbs beef chuck roast, cut into 2-inch pieces
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 4 garlic cloves, minced
- 1 inch ginger, minced
- 2 tablespoons gochujang (Korean chili paste)
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 2 cups beef broth
- 2 carrots, sliced
- 2 green onions, chopped (for garnish)
- Sesame seeds (for garnish)
- Salt and pepper to taste
Instructions
- 1Heat the vegetable oil in a large pot over medium-high heat.
- 2Season the beef pieces with salt and pepper, then add them to the pot, browning on all sides. Remove the beef and set aside.
- 3In the same pot, add the sliced onion, garlic, and ginger; sauté until fragrant and translucent, about 5 minutes.
- 4Stir in the gochujang, soy sauce, sesame oil, brown sugar, and rice vinegar, cooking for another 2 minutes until well combined.
- 5Return the beef to the pot and add the beef broth. Bring the mixture to a boil, then reduce the heat to low, cover, and let simmer for about 1.5 to 2 hours, or until the beef is tender.
- 6Add the sliced carrots to the pot about 20 minutes before finishing cooking, allowing them to soften but retain some texture.
- 7Once cooked, taste and adjust seasoning if necessary.
- 8Serve the spicy braised beef over steamed rice, garnished with chopped green onions and sesame seeds.
