  • 1 ripe avocado
  • 1 cup canned black beans, rinsed and drained
  • 1/2 teaspoon lime juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • Salt to taste
  • Oil for frying (vegetable or canola)
  • Fresh cilantro, for garnish (optional)
  • Sour cream or salsa for dipping (optional)
Instructions
  1. 1In a bowl, mash the ripe avocado and mix in lime juice, garlic powder, cumin, and salt to taste.
  2. 2Add the black beans to the avocado mixture and gently combine, being careful not to mash the beans too much.
  3. 3Heat a skillet over medium heat with a little oil. Lightly fry each tortilla for about 10-15 seconds on each side to make them pliable.
  4. 4Remove the tortillas from the skillet and place 2-3 tablespoons of the avocado and black bean mixture onto the edge of each tortilla. Roll them tightly into taquitos.
  5. 5Add more oil to the skillet if needed and fry the taquitos seam-side down for about 2-3 minutes until golden brown and crispy. Flip them carefully and fry for another 2-3 minutes.
  6. 6Remove the taquitos and place them on a paper towel to drain excess oil. Serve hot, garnished with fresh cilantro and with sour cream or salsa on the side.
