- 4 small corn tortillas
- 1 ripe avocado
- 1 cup canned black beans, rinsed and drained
- 1/2 teaspoon lime juice
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin
- Salt to taste
- Oil for frying (vegetable or canola)
- Fresh cilantro, for garnish (optional)
- Sour cream or salsa for dipping (optional)
Instructions
- 1In a bowl, mash the ripe avocado and mix in lime juice, garlic powder, cumin, and salt to taste.
- 2Add the black beans to the avocado mixture and gently combine, being careful not to mash the beans too much.
- 3Heat a skillet over medium heat with a little oil. Lightly fry each tortilla for about 10-15 seconds on each side to make them pliable.
- 4Remove the tortillas from the skillet and place 2-3 tablespoons of the avocado and black bean mixture onto the edge of each tortilla. Roll them tightly into taquitos.
- 5Add more oil to the skillet if needed and fry the taquitos seam-side down for about 2-3 minutes until golden brown and crispy. Flip them carefully and fry for another 2-3 minutes.
- 6Remove the taquitos and place them on a paper towel to drain excess oil. Serve hot, garnished with fresh cilantro and with sour cream or salsa on the side.
