  • 1 cup red kidney beans, soaked overnight
  • 4 cups water
  • 1/2 lb ground beef
  • 1/2 lb chorizo sausage, sliced
  • 2 cups white rice
  • 2 ripe plantains, sliced
  • 2 avocados, sliced
  • 1/2 cup hogao sauce (Colombian tomato and onion sauce)
  • 1/4 cup cilantro, chopped
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Black pepper to taste
  • 1 lime, quartered
Instructions
  1. 1In a large pot, combine soaked beans and water. Bring to a boil, then reduce heat and simmer for about 1.5 hours or until tender. Add salt to taste.
  2. 2In a separate pot, cook rice according to package instructions. Set aside once done.
  3. 3In a skillet, heat vegetable oil over medium heat. Add ground beef, season with salt and pepper, and cook until browned. Remove from skillet and set aside.
  4. 4In the same skillet, add sliced chorizo and cook until browned and cooked through. Set aside with the ground beef.
  5. 5In another pan, fry plantain slices until golden brown on both sides. Remove and drain on paper towels.
  6. 6To assemble the platter, place a scoop of rice and beans on one side of a large plate. Add a portion of the ground beef and chorizo next to it. Arrange fried plantains and avocado slices around the meats.
