Ingredients
- 1 cup red kidney beans, soaked overnight
- 4 cups water
- 1/2 lb ground beef
- 1/2 lb chorizo sausage, sliced
- 2 cups white rice
- 2 ripe plantains, sliced
- 2 avocados, sliced
- 1/2 cup hogao sauce (Colombian tomato and onion sauce)
- 1/4 cup cilantro, chopped
- 2 tablespoons vegetable oil
- Salt to taste
- Black pepper to taste
- 1 lime, quartered
Instructions
- 1In a large pot, combine soaked beans and water. Bring to a boil, then reduce heat and simmer for about 1.5 hours or until tender. Add salt to taste.
- 2In a separate pot, cook rice according to package instructions. Set aside once done.
- 3In a skillet, heat vegetable oil over medium heat. Add ground beef, season with salt and pepper, and cook until browned. Remove from skillet and set aside.
- 4In the same skillet, add sliced chorizo and cook until browned and cooked through. Set aside with the ground beef.
- 5In another pan, fry plantain slices until golden brown on both sides. Remove and drain on paper towels.
- 6To assemble the platter, place a scoop of rice and beans on one side of a large plate. Add a portion of the ground beef and chorizo next to it. Arrange fried plantains and avocado slices around the meats.
- 7Top the dish with hogao sauce and sprinkle with chopped cilantro. Serve lime wedges on the side for squeezing over the dish.
