  • 4 large bell peppers (any color)
  • 1 cup quinoa
  • 1 pound ground lamb
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup pine nuts, toasted
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 can (14 oz) diced tomatoes
  • 1 tablespoon olive oil
  • 1 lemon, juiced
Instructions
  1. 1Preheat the oven to 375°F (190°C).
  2. 2Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat and simmer for about 15 minutes until water is absorbed. Fluff with a fork and set aside.
  3. 3In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  4. 4Stir in minced garlic, ground lamb, cumin, coriander, cinnamon, and paprika. Cook until lamb is browned and cooked through, about 7-10 minutes. Season with salt and pepper.
