Ingredients
- 2 chicken breasts, boneless and skinless
- 6 cups chicken broth
- 3 medium potatoes (waxy variety), peeled and cubed
- 2 medium potatoes (starchy variety), peeled and mashed
- 2 ears of corn, cut into thirds
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup guascas (Colombian dried herb, optional)
- 1 teaspoon cumin
- Salt and pepper, to taste
- 1 avocado, sliced (for serving)
- 1/4 cup fresh cilantro, chopped (for garnish)
- Capers (optional, for serving)
Instructions
- 1In a large pot, add the chicken breasts, chicken broth, and chopped onion. Bring to a boil over medium-high heat.

- 5If using, stir in the guascas and let simmer for an additional 5 minutes for the flavors to meld.
- 6Taste and adjust seasoning with more salt and pepper if necessary.
- 7Serve hot, garnished with fresh cilantro, avocado slices, and capers if desired.
