  • 2 cups red beans (soaked overnight)
  • 8 cups water
  • 1/2 pound chorizo, cut into slices
  • 1/2 pound ground beef
  • 1/2 pound pork belly, diced
  • 1 cup white rice
  • 1 avocado, sliced
  • 2 ripe plantains, sliced
  • 2 large eggs
  • 1/2 cup arepas (corn cakes)
  • 1/2 cup hogao sauce (tomato and onion sauce)

Instructions
  1. 1In a large pot, combine soaked beans and water. Bring to a boil, then reduce heat and simmer until tender, about 1 hour. Season with salt and pepper towards the end of cooking.
  2. 2In a separate pan, cook the pork belly over medium heat until crispy. Remove and drain on paper towels.
  3. 3In the same pan, add chorizo and cook until browned, then set aside.
  4. 4Sauté ground beef in the pan until fully cooked; season with salt and pepper. Mix with the chorizo and pork before serving.
