Ingredients
- 2 cups of fresh corn kernels (or frozen if fresh is unavailable)
- 4 cups of water
- 1/2 cup of sugar
- 1 teaspoon of cinnamon
- 1/4 teaspoon of salt
- 1/2 cup of lemon juice
- Optional: Mint leaves for garnish
Instructions
- 1In a large pot, combine the corn kernels and water. Bring to a boil and then reduce to a simmer.
- 2Cook the corn for about 30 minutes until soft, stirring occasionally.
- 3Remove the pot from heat and let the mixture cool for about 10 minutes.
- 4Using a blender, puree the corn mixture until smooth.
- 5Strain the puree through a fine mesh sieve or cheesecloth into a large bowl, discarding the solids.
- 6Add sugar, cinnamon, salt, and lemon juice to the liquid, then stir until sugar dissolves completely.
- 7Transfer the mixture into a clean glass jar.
- 8Cover the jar with a cloth and let it sit at room temperature for 24 to 48 hours to ferment slightly (the longer it sits, the tangier it will become).
- 9After fermentation, strain the mixture again if needed and chill in the refrigerator before serving.
- 10Serve chilled, optionally garnished with mint leaves.
